Jan MOTM - Meals of the month!
Here’s a quick selection of some of my favourite meals I’m making this month. I’m making a conscious effort to get in some more fruit to try and top up the vitamins post Covid, but for everyone in winter it’s a good idea to help support your immune system (and keep away from the biscuits!). There might be something you see you fancy, or can improve on! (If so please send and I’ll add it to my @yoga_ and_barbell Instagram).

Breasola and Avocado Toast
Greek Yoghurt, Caramelised Banana, Peanut Butter and Honey.
Lemon Tea and Orange (ideal for sore throat!)
Scrambled Egg with Sciracha Hot Sauce, Avocado and Homemade Soda Bread
Yoghurt, Caramelised Banana and Toasted Nuts, Yoghurt, Honey and Bluberries. Plus Toasted Rye with Butter and Peanut Butter.
Poached Egg on Buttered Bagel, with Rocket and Tomato. Half Bagel with Jam and Blueberries
Carrot and Coriander Soup with Homemade Soda Bread
Pasta with Green Pesto, Sweetcorn and Peas, plus Rocket, Spinach and Grapes.
Roast Chicken with Roasted Carrot, Parsnip, Red Onion and Potato
